Cooking Up a 'Storm'--Hubby's Favorite Recipes

With a renewed vision in mind, I seem to be looking at all the different areas of my life as a wife and homemaker through 'new eyes'. Somewhere along the line, after five babies, 20 years of homeschooling, developing my quilting, sewing, and song writing skills and the many activities with the teens, I seemed to have totally lost my vision for cooking well rounded meals for the family.

As part of changing my focus and being more of a blessing to my dear hubby, I have decided to give my cooking and meal planning a little more thought and planning. You know, it's not that hard to put together a nice meal. It's just in the busy-ness of living life, I lost my love for cooking. I had not thought of cooking as a way to bless my family in a very long time.

When we first got married, I practically 'lived' in my brand new cookbooks! I had such a fun time trying out new recipes and enjoying Tim's pleasure at my efforts. My favorite cookbook, which I recently replaced from a used book company, was the 1987 cookbook from Better Homes and Gardens. It's so nice to have a new copy! My old one was falling apart!

I was just telling my daughter just how much fun it was to surprise my new husband with special recipes every night. In a year or so, we had whittled down my experiments to our favorites with tweaks here and there to suit our tastes.


It's so strange, but it's as if I was somehow able to 'turn back the clocks' on my attitude towards cooking this week. :o) Tim (and the kids) have thoroughly enjoyed the meals I've made lately. The fact is that I can put a 'meal' together in about 15 minutes, but I had gotten so efficient at it, that I quit putting any real time or effort into cooking at all. Cooking was just another task to check off the to do list.

So anyway, here's my menu plan for the week. I hope to add a few of these to my recipe blog ( my online recipe file of my family favorites').

You could call this list, Hubby's Favorite Meals. It seems fitting to do this during our anniversary weekend. :o) I'm 'aiming' high...with even some desserts scheduled here and there, but I've given myself permission not to cook everything on the list if things get crazy. Already, I've made some enjoyable meals and found myself having a great time! Rebekah has been hanging out in the kitchen too--wanting to help me and learn more about cooking from scratch. Back in our early days, I cooked like that a lot. So you will see this reflected in the selections.

Six Easy Ways to Make Your Family' s Favorite Meals Healthier

For the most part, we are creatures of habit and most of our kids don’t want to try ‘new’ things… So in trying to educate our children and train their taste buds towards foods that will keep them healthy, it’s best if we sort of ‘fool’ them into eating healthier by simply improving the health  quality of the family favorites that they are already accustomed to.  Why take the trouble? Do you know how many of our children are now starting out life overweight? Do you know why? Believe me…it’s time to break with our culture…and do things different. Just cause everyone else is jumping off a cliff, children in tow, doesn’t mean we have to!  Here’s what Carol Simontacci, author of ‘Your Fat is Not Your Fault’ says about what she calls “The Fattening of America”….


“If your overweight, chances are you’re not a glutton, but you probably do eat too many nonfoods. Some nutritionists call these foods ‘food artifacts,” or products made by human workmanship. These are substances that are not naturally present in the world and were not part of our ancestor’s diets.

If you look at supermarket stats, you’ll see what Americans are buying—and it isn’t food!  We’re eating more pseudofood now than ever in the the history of the world! And don’t think your body doesn’t know the difference. That entree may taste and smell like real food, but your body knows otherwise, and it knows where to store every toxic molecule.  All the low-fat this and low-fat that, the sugar substitute here and the fat substitute there will not solve your fat problem.

   Over 75 percent of the food products sold in our supermarkets are either nutritionally dead or nutritionally toxic. We don’t bury that dead food; we store it on our hips, waists, and chests, pound after pound after pound. Why build more toxic waste dumps in this country when we can use our bodies instead?”

What happens when we eat this stuff?  Carol says, “When we eat foods our bodies can’t use, or foods that contain artificial ingredients; when our digestive systems do not sufficiently break down the foods into usable parts, the liver is required to handle an excessive amount of toxic waste for which it is not prepared. And most of us don’t drink enough water or eat enough fiber for the colon and kidneys to perform their vital functions, and waste materials build up in the colon to be reabsorbed into the body.   Fat performs an important function in the body by storing all this excess toxic waste.

Logic tells us that if we clean up our diets and eat pure foods, including 30 to 40 grams of fiber a day, drink eight to ten glasses of water, and avoid synthetic chemicals as much as possible, our bodies will not have to build storage depots on our hips and bellies to handle an unnecessary load of toxic waste.”  In other words, friends, Fat has to encase these toxins to keep them out of our systems! No toxins…less fat in all the wrong places!

Six weeks ago, I decided to take Carol seriously and say No to junk food, sugar, fast food, bread and other man-made non-foods (except homemade whole grain wheat bread).  Guess where I lost the first ten pounds?  My hips, stomach, and other lumpy bumpy places.  Not only that, but my energy level skyrocketed! My hubby, who is very thin, was feeling so sluggish that he decided to quit eating the junk too. He said he feels better than he has in years and he looks less drained and dehydrated. So obviously the junk food affects us all whether we have fast metabolisms or slow.

Even if our kids aren’t overweight now, if they keep eating junk…they will be later down the road, or like my dear hubby, they’ll just be exhausted and worn down by the time they hit middle age. We feel like we’ve gotten a new lease on life! But convincing our kids to change is another issue all together!  Hence the reason for today’s article…We need to make gradual changes and wean our kids off this stuff.

The biggest thing you can do to improve your meal’s health factor is to cook from scratch. The fact is that if it’s in a box or a bag or has instructions..as Carol Simontacci (nutritionist) says, “Don’t eat it!” It’s probably not good for you!  I know..it's time consuming..but our country is in a crisis...and we need to spend more time on this issue! Our children's future health and quality of life are depending on our willingness to make this a priority. 

Second, replace the BAD fats with GOOD fats Don’t buy fatty meats…but instead choose lean meats. Instead get your fat from good sources like real butter, olive oil, canola oil, and lots of nuts for snacks, even avocado slices to get the good fat that actually lowers cholesterol and gives you the energy you need.  This will cut out the hunger factor and avoid so much need to snack. Even your skin will be softer!  Don’t eat or use saturated fats if you can at all avoid them…and of course, fried foods are pretty much a disaster… so avoid them as much as possible.

Third, have a good source of protein at every meal! This will keep you from having a carb heavy diet that causes insulin rush and food cravings..leading to excess snacking of the junk food.  Spend less on junk and more on lean meats, low fat cheeses (the only thing worth buying low-fat), eggs, turkey bacon or protein drinks (look for ones without the excess chemicals), tuna, fish, poultry etc.  Sandwiches are more bread than anything else and without protein will lead to excess hunger and cravings.  Make chunky soups with lots of meat and veges, that can sit in the fridge and be eaten easily and packed for on the go if needed.  I keep at least one cold roasted chicken in the fridge just for snacking purposes.

Fourth, add lightly cooked vegetables to every meal and keep raw veges  ready to eat for snacks in between meals.  Plan to have two thirds of the meal be veges to one third meat.  Be creative! There’s all kinds of ways to add veges to a dish…get the kids used to chunkier sauces, add veges to casseroles, etc.

Fifth, cut out the sugar!! Provide lots of fruit, ready to eat, for dessert instead of nutritionally worthless pastries, chips and snacks.  If you can’t leave the sugar out of your main dishes altogether, at least use a natural substitute like Truvia or Stevia.  But skip the baked products as much as possible.  I buy one back of chips for the week and one bottle of soda—we’re still in the weaning stage. When those are gone…they’re gone! Then I keep lots of fruit on hand.  We thought it was going to cost a lot, but surprise! When the fruit was there and the bread, cookies, chips, and soda were gone…they ate it…and forgot to complain!


Last, substitute GOOD CARBS for BAD CARBS in your main dishes and side dishes.  Oatmeal and Oat flower, Brown rice, Pearled barley, sweet potatoes and protein fortified pasta will not spike blood sugar levels nearly as much and won’t cause the cravings that normal pasta, white flour, rice, and white potatoes do.  Be aware..Gluten Free Pasta is HIGH on the glycemic index!

These are habits that we need to instill in our lives and the lives of our children. Yes it’s easier to just eat readily available quick cook precooked food…but the price we pay in terms of health and fitness for the rest of our lives is simply not worth the convenience and time saving. Make some time for you and your children’s health…it’s an investment that will pay off for life!

Comin’ Homes  Menu Plan for May 25-31
  • Roasted turkey breast, roasted asparagus, Baked Sweet Potato
  • Chicken and Brown Rice Casserole, Sauteed Broccoli
  • Healthy Salisbury Steak, Baked Potato without fat, Basic Salad
  • Roasted Chicken with Mushroom Gravy, Roasted Veges
  • Lemon Pepper Halibut, Steamed Rice, Roasted Asparagus,
    Pumpkin Pie (1 small piece per person)

Sunday Dinners:
Roast Beef w/Roasted rosemary tossed whole greenbeans, new potatoes, and carrots
Skirt-Steak Fajitas with Sautéed Peppers and Onions  (go easy on the canola oil!)
(use corn tortillas instead of flour if allergic to wheat)

Menu Plan with 6 Delicious and Healthy Recipes! Plus bonus Salads

 

Here they are...next week's menu plus recipes! I have cooked a lot using Carol's books and the recipes really are delicious! She had Chef Margaret West design these for her as she is a nutritionist. All of these recipes come from the book on low-carb, allergen free cooking by Carol Simontacci called Your Fat is Not Your Fault..  You will feel great if you eat these meals in the right proportions of course. :o)  The links lead to recipes on my recipe blog, Comin' Home's Favorite Recipes.

If you aren't in to low-carb or allergen free, you should be able to find these easily with a quick internet search. Substitutions aren't difficult either. Email me at homemaking@eastex.net if you have any questions.  I'll be posting the dessert recipe on Monday.

Weekend ReCap and Monday’s Challenge: Living Room, Menu for This Week, Declutter Fabric Stash

Whirlwind of Activity!  The kids helped me do a major cleaning marathon so that they could have a couple of friends over for dinner before heading off to the Teen Scholarship Fund Raising Square Dance in Huntsville. They explored the woods, ate pizza (no I didn’t eat any!!!), had a classical ‘jam fest’, (one of the boys is a member of the Houston’s Young Symphony Orchestra), and after the dance, they came back and had ice cream and rode Tex. And while they were doing that, I cooked my FOUR King’s Ranch Chicken Enchilada casseroles to sell as a fundraiser for my son’s trip to Nationals!  What a job! But we made $80.00 so it was worth it. :o) I would rather have gone square dancing, but I just couldn’t fit it all in.

Frugal Tip: By the way, have you thought about the idea of cooking ahead for Mother’s day?? I sure plan to!! We will be gone for three days at Austin’s Regional Invitational Speech & Debate tournament..the whole family! We drive home on Mother’s day and I’m afraid the week’s expenses will preclude eating out. So while I’m still fresh and cheerful, I’m going to double a casserole this week, Lasagna perhaps, and then we can just pop it in the oven when we get home!  You may prefer something more elegant, in which case you might like to check out my post for an inexpensive, easy, elegant dinner…that even hubby could do—it’s a great tutorial..pictures all the way!!

\While the kids were gone to their dance, Tim, Christian, and I put together a HUGE wardrobe that was given to me while Jacob, my older son was doing a friend’s yard work! Thank you dear Lord for manna from heaven! My fun job this week or next will be to fill it with all my sewing stuff, freeing up another hutch for miscellaneous office stuff, like my father’s estate papers which I work with daily, gift stash, glassware waiting to be painted for gifts, cd collection etc.  Our sewing room looks fabulous thanks to getting this extra storage space! It’s so big I just could not physically get it all in one picture.

We also helped a retired friend, Mrs. Beverly, unload her attic and disconnect all her TV’s and other electronic equipment for shipping as she is moving next weekend.  Tim and the boys love to do stuff for her. And look what she gave me!! She is a crafty queen and decorator on a shoestring ‘par excellence’. Thank you Beverly! Ahhh…the projects I can foresee in the future if my dear daughter, Rebekah, doesn’t get wind of this fabric before I can hide it from her!! Uh Oh…here she is and boy is she smiling!

Saturday~Easy Chicken Alfredo, Steamed or Microwaved Asparagus (amazingly green, fresh, and easy!!) Just zap it!,

Monday's Challenge: Master Bedroom, Menu Ideas, New Budget Form and Give Away!

It’s another glorious Monday! The weather is beautiful here and everything is green, green, green! Rebekah and I had a lovely lunch out on the patio.  However, we couldn’t afford to lounge around all day…after all it’s the start of a new week and there’s always lots to do!

How did it go last week? Did anyone get their bathroom and one other room decluttered and sparkling? I know I worked on mine and I was glad too! The sewing room is in pretty good shape now, in spite of all the sewing I had to do.

As it turns out, I got on a roll and already got a lot done there last week, but I will be  decluttering the closet and hutch this week. And the bathroom needs a good thorough scrubbing too.
Here is this week’s cleaning assignment from my
30 min.-a-day Monthly Cleaning Chart:

Week 4 - Master Bedrooom and bathroom

Do You have a spending plan?
I want to talk for just a minute about budgeting. I’m assuming all of you know how much you make, and how much you spend.  To not know that would be the same as driving down a country road at night with the lights off…a little dangerous!  My favorite author on this subject is Dave Ramsey! He has written a life changing book on this topic, The Total Money Makeover

     and a book for Teaching Kids About Money too!  My husband, kids and I took this course together at church. The kids said they were so grateful. It’s so good that a friend, Beverly, gave the ‘course’ by paying their tuition at a local church to my son, Andrew and his wife, as a wedding gift. It’s my favorite gift to give to graduates…before the head off to college and get head over heels in debt! Afterwards, is too late.You can learn a lot just from visiting Dave’s website, so if you are having any trouble getting your finances in order, be sure to visit!budge picture

The budget form you see was designed by me to allow me to fill in all the blanks and end up with no money left over. The idea behind Dave’s way of budgeting is to allocate money to every category so that we have control over our money and can decide ahead of time, where every penny should be spent.  Dave has some forms on his website too.
Note: Be sure not to type in the Totals fields because I have already programmed them to add up the totals for you. There is room to add your own categories, or you can change the ones that are already there.  Both my adult sons, used this form when they first left home to help them keep track of their money.
